I like making my own bread. Especially here in Guam. I don't know if they freeze all the bread for shipping? But something makes the bread here, that I have tried at least, taste sort of like styrofoam. B gave me a kitchen aid mixer for Mother's Day last year, and with that, I find making bread quite easy and satisfying. Here is my fairly healthy honey wheat recipe:
3 T yeast
4 c warm water
3/4 c honey
10 c wheat flour
3 t sea salt
1/2 c flax seed meal
-Mix yeast, water, honey. Let live.
-Add all flour, mix.
-Add flax and salt. Mix, then let knead for six minutes.
-Dough will be sticky. Cover and let rise 15 minutes. Punch down well, divide into three loaves, put into sprayed pans. Let rise 30 minutes.
-Bake at 400 for 10 minutes, then turn oven down to 325 for 30 minutes. (I put a pan of water in the oven during baking.)
How long would you suggest kneading by hand?
